Portobello Pizza

Portobello Pizzas or “What To Do At The BBQ”

Serves 4


4 Portobello Mushrooms, stems removed, cleaned
1 Tbsp Olive Oil
1 tsp Soy Sauce, low sodium, wheat free
1 tsp Garlic powder

Mix the oil, soy sauce and garlic
Rub the mushrooms with the marinade
Place on BBQ or oven and broil face down for 3 minutes

Turn over, fill with Herbed Pine Nut Cheese
Broil until brown, approx 5 minutes depending on BBQ or oven                    

Serves 4

Herbed Pine Nut Cheese

3/4 Cup Pine Nuts
1 Tbsp Nutritional Yeast, gluten free
1 tsp rosemary, fresh
1 tsp parsley, fresh
1 tsp thyme, fresh
1 tsp Apple Cider Vinegar
1/8 tsp sea salt

Blend all ingredients for 30 seconds in Vitamix

Spinach stuffing
Horseradish Pine Nut Cheese
Hemp Blue Cheese
Top with fresh chopped tomatoes, basil, chives or olives upon service etc
