Provencal Vegetable Salad

Just about every meal can include a salad, and this is one of our all time favorites.  There are many variations possible, which you can use as you purchase your fresh, local, organic ingredients. The dressing is something you can refrigerate and keep for you latest salad creations as you enjoy the wonders of the Provencal style. And the herb mix is great for this salad and any other dishes you want a beautiful bouquet of flavors for.

Serves 4 to 6

Provencal Dressing Ingredients

1 tablespoon Herbs de Provence (see recipe below)
3 tablespoons olive oil
1 tablespoon freshly squeezed lemon juice
1 garlic clove, pressed or  minced
2 tablespoons vegan Dijon mustard
1 tablespoon pure maple syrup or agave or coconut nectar
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
¼ teaspoon crushed red pepper flakes
¼ teaspoon truffle oil ( optional)

Salad Ingredients

2 medium-size tomatoes, seeded and chopped into ½ inch chunks ( 2 cups)
1 cup seeded and chopped cucumber
2 tablespoons finely chopped fresh flat-leaf parsley
1 cup chopped green beans
1 cup corn
¼ cup thinly sliced green onion
¼ cup chopped olives ( optional)

1. Prepare the dressing: Combining all of its ingredients in a small bowl and whisk well
2. Prepare the salad: Combine the remaining ingredients in a large bowl and mix well. Pour the dressing over the vegetables and mix well
3. For best results, chill at least 10 minutes before serving
4. Vary vegetable ingredients with those you discover at your local farmer’s market

Herbs De Provence

2 tablespoons of dried thyme
2 tablespoons dried summer savory
2 tablespoons dried marjoram
1 tablespoon dried rosemary
1 tablespoon dried tarragon
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon dried sage
2 teaspoons crushed culinary-grade lavender flowers
2 teaspoons dried fennel seeds

1. Combine all ingredients in a bowl and mix well. Store in a glass jar in a cool, dark place and use for this salad and whenever you wish to add these fresh herbal flavors to any of your Vegan Fusion dishes.
